Cajun Shrimp Chowder thanks to Kevin Weeks of npr Chowders Lighten Up 4/11/07 Chowders are healthy and filling! 1 lb. shrimp, peeled (reserve shells/heads), 3 teaspoons cajun seasoning, 2 tablespoons butter, 2 cups shrimp stock or bottled clam juice, 3 tablespoons olive oil, 1 large leek cut into half rounds (white only), 1 stalk celery diced, 1/2 red bell pepper diced, 1 clove garlic minced, 11/2 tablespoons flour, 1 cup half & half cream, 2 tablespoons tomato paste, chopped scallions as garnish. Toss shrimp in 1 teaspoon Cajun seasoning, heat pan, add butter, saute shrimp for a couple of minutes until opaque, put aside. Bring shrimp stock or juice to a boil, add shells, reduce heat and simmer for 30 minutes, strain and discard shells. Heat oil in pot, add leeks, celery, bell pepper and cook for 5 minutes, add garlic for a minute, stire in flour for 3 minutes (don't burn), whisk in clam stock, stir in cream, and tomato paste, bring to light simmer, add shrimp and simmer one minute. This is a healthy and filling soup for four servings. Enjoy!
